This recipe was adapted a few times over from a Betty Crocker recipe until I got it just right. Now, it’s my staple potluck contribution and people gobble it right up! It doesn’t take too long to make, and it’s always a hit at celebrations (and at home).
Prep Time: 25 minutes
Cook time: 6-8 hours
Servings: 8
Ingredients:
2.5 lb ground turkey (I use Jennie-O)
1 cup chopped yellow onion
2 cloves garlic, finely chopped
1 can (28oz) diced tomatoes, undrained
1 can (16oz) black beans, drained
1 can (15oz) tomato sauce
2.5-3 tablespoons chili powder (depends on how spicy you like it)
1.5 teaspoons ground cumin
½ teaspoon salt
½ teaspoon pepper
2 avocados
Directions
1. In a large skillet, cook turkey and onion over medium heat, 10-12 minutes, stirring occasionally. Drain.
2. In a 4-to-5-quart slow cooker, mix turkey, onion, and remaining ingredients. Make sure it’s mixed well!
3. Cover and cook on low for 6 to 8 hours.
4. Garnish with sliced avocado, and enjoy!
