Is anyone else using fresh lemon every chance they get? Just me? Okay, then.
I’m welcoming summer with a recipe for lemon bars from a good friend. This recipe is super easy and a definite crowd pleaser! Enjoy!
-1 cup butter, softened
-½ cup white sugar
-2 cups all-purpose flour
-1 ½ cups white sugar
-½ cup all-purpose flour
-2 lemons, juiced
-Powdered sugar, for garnish
1. Preheat oven to 350 degrees Fahrenheit
2. In a medium bowl, blend together butter, 2 cups flour, ½ cup sugar. Press into the bottom of an ungreased 9x13in pan.
3. Bake for 15–20 minutes (or until firm & golden). In another bowl, whisk together the remaining 1 ½ cups sugar and ¼ cup flour. Whisk in eggs and lemon juice. Pour over the baked crust.
4. Bake for an additional 20 minutes. Garnish with powdered sugar. Let them cool completely before cutting. Nom.
